Do people really think "washing" their hands with just water does anything? I've seen this on several YT videos, and even TV shows. People are handling chicken and then say "I'll wash my hands" and just turn on the tap and use no soap whatsoever.

Chicken can have fat on it that melts a little when touched. Either way, you're better off with slightly drier hands than potentially getting salmonella poisoning. I won't use soap if I'm just rinsing my hands after touching vegetables, but you should always use soap 100% of the time after touching raw meat, even if you just washed your hands right before touching it.

The point is not to get rid of all the bacteria on your hands but to clean the gunk off so it doesn't get all over everything you touch. If you are cooking a dish then it doesn't matter if you get some pathogens in it because they are going to be cooked anyways. from my understanding using water that's hot enough is more important to killing bacteria than using soap. turn your water as hot as you can stand when washing. soaps tend to work mechanically for removing germs, as in they trap germs and you rinse them off when you rinse off the soap. either way it's not entirely useless to just use water but you have to use hot water or else you're just giving bacteria a vector to travel around in by sloshing water all over the place.

I'm an RN and used to teach hygiene to other hospital staff.
The problem with a lazy handwash, and with gloves too incidentally, is not only that your hands are still dirty but also that you think they are not.
I've seen so many nurses and doctors breach basic hygiene standers, which they had learned and normally kept to, because things like this gave them a false sense of security.
People are more likely to worry about contamination and therefore adhere to good standards with bare hands that when wearing gloves for example. In much the same way you can expect people to get more sloppy about cross contamination in a kitchen if they have the idea that even a lazy handwash is "better than nothing"
It's the same principle that makes bicyclists take more risks in traffic if they're wearing a helmet.

Okay putting all this water and soap stuff aside, here's my question.

How come whenever I see a cooking video, the guy will handle raw meat or whatever, grab his towel to wipe his hands, then go on and grab his bottle of oil/seasoning/whatever. Not just random youtubers either, I see people like Gordon Ramsay do it. This always seemed really stupid to me. Even if bacteria wasn't a concern, you're still getting meat grease/oil all over these things. Pans and utensils are fine because you can just wash them, but stuff like oil/seasoning bottles getting all greasy and nasty just seems like a pain in the ass.
