I don't even know any Chefs from before I was born but the greatest living chef would probably be Gordon Ramsay. He's way better than all those TV/celebrity chefs. The proof is when he goes to other countries, watches masters do their thing and then does it himself almost as good.

It's because you don't know anyone else, right ? Most 3 stars chef in France (where it's much harder to get a star) avoid the camera (except Robuchon but he's dead), a very few number try to emulate Ramsay for making TV money (certainely not his cooking) but the vast majority would judge Ramsay cooking severely as not imaginative and way too much into sweet-sour cooking, which is a massive anglo-american flaw. You guys seriously put sugar fucking everywhere.

Ramsay trained in France but I doubt he could get stars in France and he get respect for his qualities as an entrepreneur, not a chef.

Grant Achatz is probably going to be regarded as the most influential chef of our time. Everything he did was just so groundbreaking that everyone copied him. Although, Bocuse if he was still alive, Pepin or one of the other French chefs that came to America might supercede them.

Since most of the old guard is gone, and most of the well known chefs today are hacks and asshats, I'm going to go with Bruno Albouze. His dishes are perfection, plus I love his weird sense of humor, and I love how much he loves food.
