I have more tomatoes then I know what to do with.
I eat them in sandwiches, salads, and sometimes just plain, but every day now I have between 6-10 more that ripen in my garden. I've given some away, but it looks like this is going to continue for the rest of the summer.

i put them out by my driveway and they're gone quick but i live in hayseed country and people feel as good about themselves in taking them as we do giving them away. same goes for chicken eggs
put them out at a stand with a tip jar and "free for the taking, tips if you want" or a similar wording and you'll be amazed at what happens
worst case scenario is you get rid of them and have a whole bunch of people who will run into your house to try and save you if it is burning down, because you've made yourself a pillar of the community. you are the tomato guy. don't underestimate the importance of this

Bell peppers and cucumber have high yield as well. Highly recommend. Jalapenos do as well but I don't particularly like them. I planted 1 plant and ingest like 2 ripe jalapenos a day from that one plant.

Remember, canned tomatoes are not picked green, shipped long distances, stored for a long time, and artificially ripened. They are picked at peak condition and preserved immediately, and with a lot more expert skill than your sorry ass could manage.

Tomatoes freeze very well, you don't even need to cook or cut them at all, just stick them in bags of half a dozen and throw in the freezer.
They end up like rocks so if you have a potato cannon then they'd be excellent ammunition if you need to remove a neightbour three streets away but don't do that.

Sun-dried tomatoes aren't a bad idea, make sauces and tomato paste and freeze. Any kind of reduction.

I'd mostly just freeze them whole though and then make whatever you want when you want it.
