What do you already know you like alot? Coffees? Lemonade? Tropical fruit punches? Raisins? Grapefruit juice? Tomato juice? Soda? Desserts? This could determine what you should start with...maybe a soaked rum or sherry cake, or a simple mixer of coke + ___.

If I wasn't hiding alcohol in a complex tropical drink or frozen pina colada (both good starts), then at home I would gradually start with a sweet after dinner cordial or liqueur to sip in the evenings. They're typically lower proof but would hit a newb hard anyway, and a bit of a craft, regional or flavor treat. Put the actual bottle into the fridge the night before so it's nice and cold. Sip and enjoy the flavors, some of which are secret recipes from monks or one single family reserve all these years:
Bailey's Irish Cream, straight up or over cubes.
Kahlua or Tia Maria, cream or half n half, crushed ice.
Get some cookies or biscotti and sip and dip with some Benedictine&Brandy, Licor 43, Tuaca, Drambuie, Frangelico, Amaretto, Sambuca.

Alone in your apartment is not a great place to be trying things. You'll have to commit to a bottle that you may not like.

Pick up a couple of beers. Probably a larger, a stout, and an IPA.
Wine isn't great since you basically have to finish the bottle. Grab a sparkling white (champagne / prosecco / whatever), a sauvignon blanc, a chardonnay, a rose, a shiraz, a pino noir, a Cabernet Sauvignon and something fortified (like port).
Spirits are like 20 drinks a bottle, so you'll have to go slower. Bourbon, gin, vodka, brandy covers enough bases.
If you still haven't found anything you like look into foreign stuff like sake/rice wine or try some of the varieties I suggested you skip since this list is already 5 times longer than is helpful.

Here’s a general rule: people drink alcohol for the effect, not the taste. Therefore, choose a drink you really enjoy (for me, it’s lemonade) get a high quality brand of it, mix it with a shot of vodka, and see how you like it. There is no right or wrong way to drink alcohol. If you think 1 shot per glass of mixer (your drink of choice) do less alcohol. If you can’t taste the alcohol that much, add more alcohol if you are feeling comfortable.

I doubt you will be able to enjoy a bottle of wine straight off the bat. Wine is usually 12-15% alcohol which is pretty high. A lot of beers for comparison are 5-7% but don’t taste as fruity. Meade isn’t a bad idea, but imo tastes like syrup. I wouldn’t recommend hipster trash like that for my first drink.

If I had to rank the palatability of different drinks from most palatable for a first timer to least I would go:

Mixed drinks
wine (white)
beer (lager / wheat / Pilsner)
wine (red)
beer (session ipa / ipa)
beer (stout / dark ale / porter)

The human body is incredibly resilient, a lot of people like to think humans are incredibly weak and fragile compared to all other animals when in reality the human body can take a stupid amount of abuse before it shuts down, almost an OP level of abuse in some cases.
