For the more safety-inclined and technically knowledgable here, how safe were/are meat safes (aka pie safes) in general? Could you feasibly use one nowadays? What sort of meats/foods could you store in them?

Do americans really?

Now I don't really have much of a sweet tooth so I don't own a pie safe, but my meat safe is actually very safe to use. You can store anything in the meat safe, really, but generally meat is more expensive than say, limes and other citrus or even canned fruit, so I definitely want to keep the meat safe. I keep proscuitto, red snapper, top sirloin, and when I'm lucky enough, wild duck and pheasant in there.

tl;dr - I highly recommend meat safes.

wait so why would you want to use one of these things as opposed to a fridge? or some kind of specialty fridge like a wine fridge that can keep a constant temperature?

There are ingredients or dishes that taste better if you let them age a while in a cool and dry place, like pies. By no means would I use it to store raw meat if I dispose of a fridge, but to store root veggies or a good salmorejo it would be great.

That thing looks like it would let all sorts of pests in there.

yeah i get that, but is a cupboard enough to achieve those conditions? i dry and age stuff on my balcony during late fall/early winter but unless you have a cellar i don't see what use these things are.

Why do amer*cans think all pies must be sweet?

Is this why all those mutts are obese?

They did in the late 1700s and early 1800s before ice boxes, yes.
