mama sita hot sauce from philippines. nice bitter edge, not too vinegary. also Cholula, not too much vinegar. again, vinegar just makes it taste like vinegar. you want it to taste like PEPPERS. so its something other than VINEGAR. unless you like hot salty vinegar, which is fine.

Hot sauces are good i just don’t like them that hot. I see no point in too much hotness without the flavor. So if you are a pepper enthusiast and not a thrill seeker I’d recommend long peppers like cayenne, not so much habaneros. Cayenne, Tobasco, Poblano, Serrano. Research anything from 5k-75k scolville units. Find hot sauce brands that use them. I used to grow lots of the extreme stuff. Not so tasty. But good for commercial use and application. I like my pepper sauce puréed not necessarily watery. Some pepper sauces are delicious. Especially those that use smoked or dried peppers. There is a sauce for everything. Wings, steaks, eggs, sandwiches, rice, pizzas, noodles. I variate often. I have tried to stay away from yucateco because they’ve found high levels of lead in them. So I’ve used high river hot sauces. They are pretty good. I grew up on Louisiana brand. I like franks on my eggs and wings. In the west coast it’s all about Valentina and Cholula. I don’t like Sriracha straight but I like it as a base. There’s many out there. hot sauce is like honey. To each their own.

my collection before I recently dumped them all. not cause of you clowns and your memeing (had most since well before that started), but because I always go on overzealous cleaning frenzies every summer and this year I decided the hot sauces would get the chop
