Sup /ck/. I just bought a bone in, smoked and salted country ham. A Portuguese friend of mine says it's safe to eat raw and sliced thin like Prosciutto. But I cant find any solid advice anywhere online and people go back and forth on it. Am I asking for tricconelli if I serve this raw with melon? Or is this just American paranoia about food safety?

This requires soaking to get out some of the salt. Alton Brown did a whole country ham vs "city ham" (a term he made up). Pay attention to the ice chest soaking and prep he does before cooking a whole country ham.

I work on food safety, i also work with somoked ham. Here in Portugal, slaughter houses are provided with a lab to search for "tricconelli", we must take a samples from all pig. There's never been and outburst in Portugal. Smoked ham is one of the safest products you can eat, it has much salt and very water activity. not many mOs can grow on it, just pay attention to molds and mites. enjoy

Many vegetables have far more nitrates than cured meats. For example, when I dry cure a 6kg pork belly for bacon, I use 14g Cure#1 (93.75% salt/6.25% sodium nitrite). You can clearly see it's a minimal amount.
