In Buffalo, there is a decent amount of variance. There are always 'trendy' restaraunts being opened up by people coming up from the City, whether or not they make it 6 months is a gamble.

But for semi-local food you have:
Beef on Weck, which is a roast beef sandwich on a kummelweck roll (chewy and topped with sea salt and caraway) with lots of horseradish is a common meal.
Chiavetta's style Chicken is popular in the summer, that is a vinegar and herb based marinade that people love up here.
Garbage Plates are around, but they're more of a novelty than anything else.
The Pizza here is different than down state, with it typically running between 3/4" and 1" in thickness and as many toppings as is possible.
Lake Fish is popular as well, and fishing in general is a popular pastime. Walleye, Pike, and Perch are the most common.
Turkey and deer hunting is large as well, personally venison is my favorite meat.

For produce wine is grown widely as is corn.
