Iron dutch is also pretty great for stews and braising, always use it when I make oxtails and beef shanks. Works well for the few times a year I make pane rustica also

Might as well get a stainless steel if you're willing to spend money on Paper Towels and seasoning work. I have one and it's great for the occasional searing of meat but I don't need it.

Yerp. It's good stuff. Bear in mind that his intention is to create a lighter cast iron. If you want absolute unit cast iron for heat retention, look elsewhere. His castings are good, though. If he does not like the result, he stops production and sales and finds someone else to make it work. That said, if you are in it for the memes, his stuff, though lighter, has at least a similar retention to Lodge, and it is much better quality. If you are going for cheapest serviceable cast iron, Lodge works fine in the US. I am not sure about other countries, as I would imagine shipping and government scams change things.

I will often place it on the stove and start preheating on medium to high heat until oil is just barely smoking while I complete other food preparation, by then the pan is ready to cook on. I want to also mention that I use an induction stove.

I bought a cast iron grill pan. How the hell am I supposed to clean this thing after cooking?

>> No.12656172

>>12656127
first of all throw it away, only good for searing meat and literally nothing else
but I would take the course side of a regular sponge under the hot tap to get off any food gunk. each sponge will last you like 2-3 cookings/cleanings

>> No.12656409

>>12656172
See, I was always under the impression that you weren't supposed to clean cast iron with water or sponges, and you were just supposed to wipe it off with a towel/paper towel. I've never owned cast iron cookware before, but I wanted a grill pan, and this cast iron was way cheaper than one of the stovetop covering ones that you see on TV.

>> No.12656420

nigger what
yes you use water and a sponge. soap is debatable, i personally opt not to use it. just make sure you get all the moisture off before you store it or it'll rust (speaking from experience)
i put mine back on the stove or into the oven to dry off before storage

>> No.12656437

I don't know, I vaguely remember hearing that somewhere; probably here on /ck/, actually. I thought it was like teapots, which I had also heard you're never meant to wash.

Not the other anon, but soap pulls out the fat that soaks into the pan and seasons it. You CAN use soap, but you'll have to re-season the pan each time. So, I hit it with a bit of steel wool or rough scrubber, and if I'm worried, I'll rub some oil into it and cook it for a few minutes in the oven at 500°. Typically just scrub it out, though.

For the purists, I'll clean it with soap if I don't know when I'll use it for something different; I don't like my cobblers to taste like fajitas, personal failing. Old habit from when I only had one pan. Now I've got a full set for the kitchen, and a set for camping, so I don't have to do that anymore.

>> No.12656873

Forgive me, but I am poorfag. Is it worth getting a pre seasoned iron skillet? I've read that even though they are pre seasoned you still need to season them before use. I also do not have an oven so I can't season a skillet that way.
