No spice is used more than pepper. It’s insane if you think about it. A spice mainly grown in Vietnam, Indonesia, and India is used in every dish you cook.
Not even onion and garlic can compete with peppercorn.

True that. The history of pepper is bathed in blood and drenched in history. There's never been a more fought over and held as commodity spice. We should all appreciate what it took to get pepper to all our tables and kitchens.

Why it is still so expensive, with it being so popular you would think it would drive down the price but it still costs quite a lot for the small amount you get. Its more expensive than more exotic spices like cumin and turmeric and such.

I find chili peppers more astounding desu
>Originally grown and used in only a few parts of central america
>Now used in every single cuisine on earth
You could generalize this to nightshade I suppose, but it's just crazy to me that Chinese recipes that are considered "ancient" were not created until after Columbus explored the Americas.

Yep. If anything we're simply strengthening the routes created hundreds of years ago. I didn't mean to mock your first post or anything, it's easy to acknowledge the interesting history of international trade. But as you say, in a modern sense it's pretty much just about efficiency (and more and more the nudge is for environmentally responsible).

If you like the history and like to read, check out Shogun. It's about an English navigator that gets stranded in Japan in 1600, but it also establishes the Netherland's surge in trading dominance against their Spanish/Portuguese enemies as well as his mission to establish new trading routes in the new world and in undiscovered areas.
