12 eggs, boiled for 12 minutes
3/4 cup finely diced celery, with leaves
3/4 cup finely sliced scallions
2 generous tablespoons pickle relish
2 tablespoons capers, rinsed
Zest and juice of 1 lemon
1 teaspoon cajun seasoning
1/4 teaspoon curry powder
1 tablespoon minced fresh parsley
1 teaspoon mustard
1 teaspoon horseradish
Salt and pepper to taste

Guys please post recipes I just boiled 15 eggs last night for this reason.
I’ve been experimenting and so far my favorite is:

>mayo
>onion powder (would use real onions but out)
>little bit of minced garlic
>black pepper & salt
>dan of red hot chili oil
>toasted white bread

Pretty good. Tried a few other mixes with mostly swapping out the chili oil for another ingredient or two. But I’ve been on a spice kick
