You can buy sodium hexametaphosphate online and get the same emulsification power but for better quality cheese. Just a small pinch (maybe one eighth the amount of salt you would use) and your cheese will melt like that. Just add sodium hxmp to good cheese and don't buy that shit.

I know, I'm just saying you can buy this stuff and add a tiny pinch to a cheese sauce and when it cools it will melt just as well as "American cheese". I know most people won't bother but it is pretty easy to keep your kitchen stocked with sodium hxmp. You don't need much and a pound of it should last you a year or more. It is like maybe 10-15 dollars a pound.

Not anymore. After G3 bought majority share of Kraft those goddamn brazilians were somehow able to make all of Kraft's shitty products worse.
The cheese has been reformulated so much recently for cost-savings that it no longer has decent melting properties.
