What's your opinion on vegetable oil? It's the only thing I use for frying and baking. What do you guys use?

I'm trying to cut vegetable oils out of my diet because they're inflammatory and unhealthy. These days if I want something deep fried I use lard, and when I need to saute something I use butter.

I try to avoid it. Used it a bit to season some cast iron stuff and fried a few asian dishes in it, but that's it.
Olive oil, butter, coconut oil, or whenever I find it: high oleic sunflower oil are my go to's nowadays.

Same. Vegetable oils that contain omega 6 fatty acids are trash. Neutral omega6 oils like olive oil are still cool. You still have to attempt to strike a balance between saturated and unsaturated fats to get a favorable 3 to 6 profile. Vegetable oils are simply unsaturated triglycerides, which in normie speak equates "Omega x oils." These do not cause inflammation and whatever Dr. Mercola post you read your info from is without a doubt, wrong.

The only type of fat with overwhelming consensus on being unhealthy is trans- fatty acids, because of their tendency to build up in your system.

A varied fat diet is necessary for normal health, and any attempt to cut out a specific fat from your diet is a fool's errand. Incidentally, I'd like to remind people that most dietary cholesterol is excreted in the feces I'm a normal, functioning digestive system. Most cholesterol is biosynthesized from steroids in your body, which in turn are made from fructose carbon skeletons.

Lard and butter and tasty, and when eaten in moderation, will not negatively impact your health. Dairy and egg yolks contain a treasure trove of lipids (sphingolipids, phospholipids, branched chain fatty acids) from bacterial origin and your body benefits from. Again, eat a varied and mindful diet.

I use to use vegetable oil for most things and now use sunflower oil as a substitute after getting a big bottle of the stuff. They both smell bad when using it for cooking, but with baking I can't tell a difference. Olive oil is my favorite, but doesn't go well with everything.
