Persian main savoury dish - Rhubarb Stew, Khoreshteh Rivas. I've only ever had this stew with celery rather than rhubard but it's intriguing.

Jam is what it's usually used for where I live, but you can also make a nice tart sauce that goes really when with certain kinds of fish. Herring and mackerel for example.

It's called pie plant for a reason, op. It's great in many fruit desserts; crisps, cobblers, custards. I've never seen a savory use for rhubarb
