Food allergies

Please help me figure this out it’s starting to piss me off.
I have food allergies that I’m aware of (peanuts, tree nuts, some legumes like peas and lentils) but I’m usually alright to eat out with no worries.
But EVERY fucking time I go to a shitty “authentic” Mexican restaurant, you know the ones that bring out chips and salsa and are all nearly identical to one another, I have allergic reactions, usually after eating chicken or lettuce. Is there some weird preservative that cookie cutter Mexican restaurants use or an ingredient that is known to cause problems with people with an intolerance that I’m not aware of? Google searching this only brings up faggy mother-baby sites.
Any experience with this or something similar?

Most of my allergies go away if I persist on eating those things, I do not have anything that could give me a huge shock

But Cherries, fresh cherries give the most horrible allergic reaction. I can eat them canned, cooked etc. but something about those fresh cherries and my throat is on fire and itchy

Fuck cherries I know exactly what you mean. I forgot to mention in the op any pulpy fruit excluding citrus fucks me up.
As soon as I eat something I’m allergic to I get that metallic taste in my mouth and I have to endure two shitty hours of chest pain and shivering until I violently throw up. Just got done throwing up a few minutes ago, actually. Happens once every few weeks, sometimes more often.
