Combine rice, chicken stock, chicken, shrimp, chopped andoulli sausage, peppers, tomato, spices (pepper, garlic, bay leaf, thyme, Cajun seasoning mix (paprika, garlic, pepper, onion, oregano, cayenne, thyme)).

In a pot, cook chicken and sausage, reserve. Partially cook veggies, then add rice tomatoes and stock. Simmer until rice is cooked. Add back meat. Season to taste with salt.
