But really, eggs (fried for hot food, hard-boiled for cold) are your best friend. You can add them to virtually anything, three meals a day, and they'll stretch the meal and be great.

I just make a big pot of rice and beans or chili or whatever and eat it for dinner everyday for the whole week. I don't even care anymore.

Herbs and spices help a bunch. Most soups are basically the same pattern.
Sweat some onions and garlic, add stock and things that cook for a long time like potatoes, add things that cook quicker. The vegetables you throw in there matter, but your spices matter more. My bachelor Italian or french chicken soup uses many of the same veg as a bachelor hot and sour soup. The biggest difference is oregano and bay leaf in one and sushi ginger and chili oil in the other.

Same with a cheap fake curry using potatoes, onions, and bell pepper and fake ass fajitas using onion and bell pepper. Cut and prep and spices, but the same handful of ingredients.
