There is a historic reason why there was a differentiation between slice joints and pie joints when it comes to pizza places. Slice joints were not just lower quality places, they were also squeezed hard by the mob. The had no choice about who the bought their cheese from and who picked up their garbage. The mob left pie joints alone, because those were the places they were more likely to actually go to. These places frequently made their own cheese and cooked pies to order in coal or wood fired ovens. They were sit down places that often had beer and wine and never sols pizza by the slice. So the distinction between getting a slice or going out for a pie specifies two different types of place serving different styles of pizza.

Not to mention the kind of pizza sold only by the is traditionally different from that sold by the slice. Slice joint pie tends to be made with low moisture mozzarella and be cooked in a 550 degree F oven. Pie joint pies are cooked in a much hotter oven and often use fresh mozzarella.
