only reason to use cast iron is for a good sear on something. same thing can be accomplished by first seasoning a stainless steel pan and then being grateful that you live in 2019 and don't have to use cookware from the Victorian era.

Just cook bacon a heap of times to begin with, use a lot of oil to make sure nothing sticks. After a few uses nothing really sticks anymore, its never going to be non stick like a teflon pan, i still keep one of those around for eggs or fish or anything like that.

but the cast iron has it has its merits. I like the idea of having a pan which will never ever wear out, its almost completely indestructable, i can get it incredibly hot, i can chuck it into the oven, no handles to melt, no coating to scratch and become useless. And ill still be using it nearly daily when im an old man, and one day my kids will use it.

Cleaning up is easy, you can buy chainmail scourers just for cast iron pans. just run it under water and scour around it with the chain mail to scratch anything off. The pan is usually still warm enough to just dry itself afterwards

I used to work at a foundry and acquired a lot of cast iron cookware over the years. Most of it sits in the cupboard untouched for years and requires attention, but my 10" skillet is atop the stove and is used almost daily.

The thing is maintenance free at this point. Keep it hot, keep it greasy, keep it dry when you aren't using it. Don't soak it or do/cook anything dumb in it. Fry eggs fine, omelette fine, quick sauce, reduction etc, wipe afterwards, rinse, likely still looks a bit greasy and usually still hot so dries quick. Like that it goes in the oven easily.

The other piece I like best is my 6L oval casserole with lid. It is heavy and I've long given up using it for anything other than a bread mould. Back in the day it was great for a tied roast plus trimmings. If you make really wet sour dough on a surface with a scraper paddle, the sort of thing that won't hold a shape it makes a really good thing to make a loaf of bread in.
