tabasco actually goes way past typical fermentation - its much more align to fish sauce where it starts to partially rot into mush but theres so much salt that nasty bacteria doesn't get out of control. This shit smells disgusting when they open the barrel lid on a fresh batch. They cut it with vinegar to greatly reduce how pungent it is.

The appeal of ‘sco is that there’s almost no other flavor than vinegar and a bit of heat- it’s unique in that regard, even the shitty southern-style hot sauces will still have a noticeable pepper taste to them.
I can understand why some people don’t like it or think it’s boring, but the flavorlessness is a draw for me. If I want my pizza or eggs to be spicy, I don’t necessarily want the taste of peppers to drown it out.
