I'm about to be moved from dish to the line and being training on flattop/grill.

How do I not fuck it up?

Congrats on the promotion.

First of all: Watch the masters. Practice on flipping shit, try squirting the right amount of oil out of a bottle, and practice haste.

Second of all: Depending on what you will be cooking on the grill/flat top, and look up videos of people making those things, and watch. Also try watching tutorials. For the flat top you could get a panini maker/griddle that comes with a flat side and use it to simulate practice.

True facts. Stay in dish, bro. Moving out is way more stress for not much more money. Just invest in things to make dish easier. A good plastic apron, good elbow length gloves, nice headphones. I used to wear a chef hat in dish so I could put my phone or a speaker in the hat. Get a fan to keep cool. The waitresses would bring me back beers when they poured the wrong one, or if you are nice to them and go get the bartenders stuff and bring it back she might give you free beers. Dish is unironically the best kitchen position.

Have you ever daydreamed about the fact that if you were able to take out your lungs after a long shift and wring them out a whole lot of collected steak juices would come out after being inhaled all night/day?

flat top and fry both get whats called rubber lung it comes from having piss poor ventilation and the silicon dioxide added to the fry grease to prevent foaming and what happens is it evaporates out and has to condense somewhere so im pretty sure my lungs look a lot like my hood vents
