Do you retards even know food in restaurants isn't prepared as you order it? It's most often days, even weeks old and it is just reheated for you. This is what you eat when you pay huge money for a meal at a fancy restaurant.

There's a fancy steakhouse near where I live with some expensive prices and an open kitchen, I can watch my steak as it's prepared and the extra money is honestly worth it.

Knowing how long the ingredient stays fresh after cooking is part of the art. Sure the bolognese sauce was cooked yesterday for hours, bechamel is from the morning and the pasta was cooked and portioned yesterday but your lasagna can be baked fresh and it's fresh in general.

Fresh prepared food can be used for two or three days at most, and that's only for things like sauces. Cut vegetables and meat are only prepared in small batches and used for two consecutive services at most (dinner+lunch the next day) then discarded, or whenever it's no longer serviceably fresh.
Anywhere that is not adhering to basic FIFO and date labeling is not a "nice" or "fancy" restaurant.

I worked in really shitty restaurants in the past but even they adhered to the FIFO rule. I mean if you don't you just end up wasting space and containers and it increasingly becomes harder to manage space in the fridges.
