How have you tried cooking them? I know most people say cooked vegetables should still be a bit crisp but that just leaves Brussels sprouts with a sulfur taste. It was my understand that meatloaf was supposed to be an easy dish that anyone could make and modify to their own preference. Ground chuck was cheap back then. It was super low tier meat and thus easy and cheap to buy large quantities. Meatloaf was on a lot of american home dinner plates for a long time.

Everybody's got their own thing they like to mix in with the meat and some things are better than others, but over all, it's pretty hard to fuck up meatloaf.
