Why is this so complex? Here in the Netherlands, you either take a little scanner with you through the store so you can scan stuff as you grab it and then at the end you put the scanner back into a hub and you can pay for your shit at a machine, or you can just scan all your stuff at such a machine at the end. Nothing like a bagging area or anything like that. Occasionally you get flagged for a random manual check where a clerk checks 2-4 items in your bag to see if you're not stealing and that's it.
