People say this, but I've never really understood. Like 99% of the beans flavor seems to be by how its cooked. So, if you cook in a pan with an ass ton of garlic, salt, pepper, cumin, turmeric, and a base of salt pork or olive oil and then deglaze with vinegar or lime it really doesn't seem to matter if the beans were dried or canned.
