Should meat be included in tatertot casserole? Sometimes I like it without meat but I have been thinking of maybe making a texmex version with a taco seasoning pack and ground beef. Any ideas?

I have had luck with pork, might want to try churizo. The best Totdish I have had were vegetarian or used small amounts of fresh beef simply to complement the flavor. Its Midwest poverty food, to much meat not how it was meant to be made.

Yeah leftover pulled pork or chorizo might be a good option. My plan is to perfect it in the oven, and then transition to the crockpot for a good hungover breakfast.
