Every other day i have an egg on toast instead of a bagel and locks or cream cheese for breakfast
on sundays I either go out for eggs benedict brunch, or make 4 eggs and either bacon or steak. I usually use between 1 and 3 eggs incidentally cooking other stuff during the week.
A dozen eggs lasts me around 2 weeks usually

prob like 30 or so, either from multiple 3-4 egg breakfasts over the week or doing a 5-6 lunch or dinner scrambled egg mix.

Usually add something like diced turkey/ham/parma ham/beef/chicken alongside some chives or finely diced onions/peppers and some cheese, cook the eggs to like half done then add whatever combo of the above and slow cook it until they're all suffused and the eggs are done but still creamy.

i'll also use it to add something extra to a main meal like chicken/rice/broccoli or just have a couple of fried eggs alongside whatever meat i cooked e.g. gammon steak, turkey breast steek/porn loin/chicken thighs

but i usually regular eggs from lidl, the organic brown eggs i got had a much darker yolk colour and the egg white was sorta brighter/vibrant, and it tasted creamier, like you didnt need to add any butter to it.

Its how so many of these “dietary cholesterol doesnt raise serum cholesterol!” studies work. They operate from a baseline of someone consuming so much cholesterol already that something like 5-6 eggs a day doesn’t raise it and could possibly lower it. That and measuring fasting levels of cholesterol after consuming cholesterol rather than the postprandrial period. And they’ll categorize anyone that sees significant rise in serum cholesterol as “hyperresponders”. Very dirty. And they’ll try to swipe the obvious imbalance in the raise of LDL over the miniscule rise in HDL. THEN they’ll hilariously try to claim the particle size is what REALLY matters..

You can get some crazy dark and weird texture ones if you have outside chickens that have been snacking on plants that have carotene in them. Look it up. Nutrition can be all over the charts for eggs.

For the egg fans in this thread, I have an acquaintance ("friend") that raises chickens and sells a fair bit of eggs. I love the taste and texture, but they're hit and miss for over-easy, and goddamned impossible for soft-boiled. The density is inconsistent, and the yolks want to break instantly on a third of them frying. Is there a reason for this?

In my experience, since the organic eggs are shipped and produced in smaller quantities, they also have a higher turnaround rate. You can see for yourself that the "sell before" date is usually way way farther back on the expensive-ass organic eggs, so decide for yourself if that is worth almost double the cost.
I've noticed that the cheaper eggs don't poach as easily, too. But if you're just cracking and frying, no it really doesn't matter that much.

I eat more fast food breakfast sandwiches on the way to work than I would like to admit, so 1-2 a day a couple times a week. More if we make a hot breakfast at home on the weekends.
