something like 1000/4000 is fine unless you got some real damaged cutlery

The best way I can put this is: Any sharpening is better than no sharpening. But not all sharpening is created equally. Generally a typical santoku/chef's knife will sharpen pretty easily with just about any sharpener.

Also learn the difference between "honing" and "sharpening". Generally most knives are already sharpened plenty and what people refer to as "sharpening" is really honing. Only blacksmiths really need to "sharpen" stuff. As long as you have a basic edge a quick simple honing will do wonders for your edge.

>with just about any sharpener.
I have a chinatown stone, it's shit and it takes forever to get an extremely mediocre edge. "Stones" like that are why many people think freehanding is for expert autists with too much time on their hands. There's a reason the knife hobby community basically forgot about anything other than synthetic Japanese stones once they became widely available in the West.

If you buy synthetic chink waterstones, you'll probably want something like a 400 stone for fixing chips or reprofiling edges and a 1000 for sharpening. If you want to get the edge to a mirror polish fir whatever reason, you can also get the 3000/8000 stone.
They work great, but they wear quite fast. I got mine about two years ago and with just the upkeep of the knives I use at home more than half the thickness of the stones is gone.

The particle size is completely random, the wear and hardness is all over the map, they warp violently when they've been in water for 10 minutes, one end ends up 5mm thicker than the other end because of fuck knows why, you need 17 layers of wet towels underneath just so they don't wobble everywhere when you're using them, they're just shit products as you should expect when you pay shit product prices on ali express. But sure, they're just as good as even an entry level King stone. Obviously it's just the emperor's new clothes here.

So? I bought a Lansky knife sharpening kit (just stones, honing oil and clamp) a few weeks ago and the cashier laughed and said, "you're obviously over 18 so I don't need to see an id." I said, "you really have to be over 18 to by a sharpener?" "Yep." Fwiw, this is a southern shithole red state.

>> No.12401009

Dont buy a shitty stone. You'd be much better off, buying wet and dry sandpaper, and a small sheet of glass. Place the paper on the glass, and you have essentially a stone. Get a bunch of 800, 1500, 3000, 5000 and 7500 grit paper, and you're set.

In the long run it’s more expensive
A good japanese combo stone is $35, less if you wait for a sale
Smoke less dope and you too can afford exclusive high end luxury sharpening instead of working around all the problems with cutting corners and trying to save a penny here and there like a MGTOW

I plan on getting one. As far as I can see there are 4 main variants being sold on Aliexpress, and each variant may be sold with different sets of stones.
This one (Ruixin pro II) offers a large array of stones.
The most basic variant (Ruixin pro) is designed to be screwed into a base that you'll have to make yourself.
The third variant (nameless, it seems) has small suction caps on the base.
The forth variant (KME) is the most expensive I think and can be clamped to a table.
There's also another variant that looks like a counterfeit Lansky.
