Because they're fucking delicious. I grew up in Texas, and live in California now, and I've eaten avocados my entire life, and I still never get tired of them. There's so much you can do with them. And they're like delicious vegetable butter. If you have some avocados that aren't getting soft, you should try quick pickling them, fucking delicious.

As an avocado hater, let me hit you with some knowledge. Good guacamole is the shit. I've never really had good guacamole in my life. However, I made my own recently because I figured I might enjoy it this time. I did it real simple. Avocado, lime juice and a little lemon juice, sea salt, black pepper, small dice of red onion, cumin, and some cilantro and a few other small spices like garlic and whatnot. It was fucking killer. Probably the best guacamole I've ever had in my life.

Every other guacamole I've ever had has always been extremely plain, or slightly good and edible on some chips or whatever, but nothing as good as what I made.

If you hate avocado; and I still hate a plain avocado, they're shit and totally overrated, try making some good guacamole, it might change your mind.

In greece they are pretty profitable to cultivate recently due to their popularity in europe as a trendy and healthy food, those that planted trees a decade or two ago reap the benefits today.
They are kinda like big olives, I like to cut them, let them soak in vinegar salt and sugar and add in salad
