Now I can't trust what's going on, because I remember Rampant being much, much better than Voodoo Ranger. Maybe it's just me, but New Belgium used to taste like Christmas, but now it's all really unremarkable and lacking in something I can't really put my finger on.

Little ridges on the bottom of a beer glass will basically aerate your beer and keep it from going flat, on another forum I found some people talking about "DIY beer nucleation" and someone mentioned that they've seen rice grains used for the same effect in pubs in Germany.

now that i'm a full time alcoholic i drink natty daddy. but my favorite type of beer is hefeweizen and to me the best brands are weihenstephaner, paulaner, and franziskaner in that order. american wheat beers are mostly crap so i avoid them.

if you want american swill that isn't bum beer i'd recommend good ole budweiser. it tastes mostly like water so it's pretty drinkable and is 5% which is standard for american pisswater.

then again, you can always swallow the malt liquor pill and go for the best drunk for your buck. natty daddy has almost the same alcohol/$ and alcohol/calorie ratio of hard liquor. 8.1% hurricane and steel reserve have way more calories than that. if you don't give a shit about being a fat alcoholic then just pic whichever tastes the best to you.

>> No.12378844

That just sounds like poor quality control on the brewer's part. Some of the more acidic styles, like flemish oud bruins, can cause some acid reflux problems if you drink too much of them, but a wild fermentation batch is (or should be) pretty rigorously tested to find out its microbial profile and make sure that nothing harmful makes it to the consumer.

>There were some little white specs (few, but they were there) floating around in that shit. Is that typical or probably a bad sign?

Honestly, it's so common for these types of ales to be unfiltered that I'd find it pretty typical. The almanac sour I posted earlier is a very light-colored beer (Maybe SRM 4 if I had to guess) but it's still pretty much opaque. It's pretty normal to find yeast and bacterial "mud" at the bottom of bottles and cans.

But I would urge you to give wild fermentation a second go, masybe try some brewers that really specialize in it, like Jolly Pumpkin or Prairie.

>> No.12378889

What exactly would I look for to see if a beer is a wild fermentation vs a kettle sour? Goses are usually labeled as such, so I don't really need help there.

Funny thing is New Glarus has some other beers that are sour-ish and have none of the problems with that wild sour I mentioned.

The main difference between wild and kettle sours is the range of flavors. Kettle sours typically use lactobacillus, and it gives you a kind of pleasant creamy mouthful-of-yogurt kind of sensation. Which can be great, but that's just one species of bacteria producing one specific range of flavors. With wild sours, you get a huge range from the tons of different types of yeasts and bacteria and as a result a lot of complexity. They can range from funky barnyard chaos to almost wine-like, it all really depends on what the little critters you've got are producing. I find them to be far more interesting than your typical kettle sours.

>>12378903
If I had to guess, that's probably pretty close to how we originally produced alcohol as a species. Before we really got the science behind it, fermentation was just done with whatever yeasts happened to be on the fruit skins when you pressed them.

>> No.12378939

I'm an idiot and I misread your post, and thought you were asking about the defining characteristics. Sorry. But as for how to identify them, well, you have some options. The most obvious one is to ask the clerk at the bottle shop for recommendations on wild ales, and specify that you aren't interested in kettle sours. You could also just seek out brewers that almost exclusively do wild-type fermentations. It's more common than you think, due to the hard-to-control nature of the process. third, there are some styles that are defined by their wild fermentations, the most obvious example being belgian lambics.

It honestly depends on the year. There are better barrel aged stouts, but even the worst year KBS I've tried I'd probably still score around a 4. It's also really difficult to rate limited release stuff that also has limited distribution.

I think you're misunderstanding. Nobody is saying the founders BA stouts are bad beers; they deserve a lot of the praise they get. It's just that most areas of the US now have bourbon barrel stouts being distributed by incredibly skilled brewers, many of which exceed CBS and KBS in quality. That doesn't diminish the deliciousness of those stouts. If anything, they paved the way for what we can get now, so most people view Founders brewing with a fair degree of respect.

I think the one I tried is a 2016. Honestly it's a 3.5 at best. I'm not a huge fan of boozy beer when you can feel too much sweetness, but I've had imperial stout that tasted way better. I think overall the US users are rating way higher than europeans, so it might explains the score. But 4.4 is so high I expected way more out of it.

He's overblowing it, it's mostly just fucking Ontario, a province so addicted to tax money that the government has until recently refused to let anyone but themselves and an authorized InBev outlet (who naturally only promotes their own beer) sell it because they charge a massive vice tax on alcohol. For some reason, no one actually cares enough to make getting rid of the Liquor Control Board a major political issue, perhaps because of some retarded, latent and lingering perception that anyone that does wants minors to drink or supports alcoholism or whatever other nonsense was originally used as the justification for its existence.

The Ford government took the relatively "radical" step of letting it be sold in grocery stores, but only in a limited number set by the government - they approve of each one, which means outside of major population centres, it's still not a thing. If you want beer in Ontario, you can go to the more conveniently-located "Beer Store"s, the InBev front that plugs their own pisswater excuses for beer; or, if you want anything that isn't piss, you go out of your way to find the Control Board's own liquor stores, where the selection is always limited by having to share the store space with literally every other kind of alcohol that exists. Again, outside of major population centres, these stores are small and thus you basically get no selection.
