Actually, the easiest to find in every Italian grocery are Voiello and La Molisana. Because them are made with 100% locally grown wheat, while Barilla and Garofalo uses also Canadian wheat that gives you cancer. I am not chauvinistic, but there are reasons. Canada isn't an optimal place to grow durum wheat, so when harvested it contains a lot of moisture thath let molds to grow, and so it will develop carcinogenic aflatoxins. Meanwhile, Italian wheat, being harvested in very dry summers, does not have these problems and is basically aflatoxins free.

I was astonished what kind of shit americans put in their "100% semolina durum wheat" pasta. So I guess from a burger perspective, Barilla is among the GOAT.
That said, as mountain neighbour to italy, I also use Barilla, because it's cheap and works for me. But I do agree that the textured ones take up sauces better, but I don't really see myself buying them on the regular. After all, it's also just some random wheat, so I don't really feel like paying triple on the daily, but feel free to change my mind!
What hows SPAR/despar/spar premium stuff compared to real italian stuff? They seem to have some decent things for good prices, and spar also operates in italy.
Any italian exclusives I should stock up on, when I'm in Trieste in two weeks?
