The right amount of salt for you to enjoy whatever dish may not be the same as my liking
Salt is basically short circuiting the taste buds some need more while others need less to enjoy the very same thing

This is not why salt is king of the cooking world ...

If you cook say, a fillet of salmon without salt, let's say a basic ass way, cook over hot coals.

It would taste good because of the char coals.

How would you advance the flavors? Even adding just a sprinkle of salt on both sides would enhance the flavors, that's how spices work. It's not tricking taste buds, it's almost stimulating them in a way.

Practically nothing is flavorsome enough to qualify, though. Fresh fruits, a few greens that are palatable with some kind of acidic dressing, and really, *really* fresh meat, I mean the trout you caught five minutes ago or the venison you got an hour before, animal protein like that can get by with the Maillard reaction and nothing else. But that's a very narrow range. Functionally speaking, about everything needs salt.
