I’ve discovered that if you place the hot potato into a container with ammonia, the coefficient of heat is reduced compared to ice water; you can really reduce the time to cool it off by pouring bleach into the container also, as that forms an endothermic reaction with the bleach...but hover close to the pot to watch for the potato getting too cold
