Entirely depends on the Chinese cuisine.
Personally I find that India via Hakka style improves on a lot of dishes like Chilli Chicken or Ginger Beef but they do spice a bit different then Szechuan which focuses more on honing the oiliness of the chills then Hakka which just infused them raw right in.

I know the shit that they serve in America is bsaically the McDonalds version, if even that. i stayed with my friends family in guangzhou for a month and we ate out in a big group quite a lot.

i think chinese food is very varied, more so than 'european food'.

but in Guangzhou in the south atleast, cantonese food is about freshness and is quite simple.

like steamed whole fish, perfectly tender, very fresh, with ginger and scallions poured over.
If they had an older fish, they would deep fry it and serve it with a strong sauce, but with the good ingredient, they treat it simply.

another example of this is white cut chicken. My friends aunt would buy a live chicken from the chicken man at the market, and the man would slaughter it and butcher it for her, then she'd come back to pick it up and cook it that night. Sometimes she'd get a silky bantum.

So it's VERY fresh, and all she'd do is poach it in aromatics, like pic related, very simple.
If she had an older chicken, she'd roast it or braise it.

That's what you don't get in cheap western chinese food. The delicate simple food with high quality ingredients. You get the big punchy flavours, deep fried stuff, and that's secondary cuisine, atleast in the south.

try find a yum cha restaurant and go for early lunch, they wheel around steamed dishes. It's really good and a fun way of eating and not that expensive.

Actual chinese food is incredibly varied. You have spicy stuff from sichuan, mild and sweeter stuff from shanghai, meaty and bready almost middle eastern stuff from xinjiang... Yeah you can do your own research on it. But the variety is absolutely incredible, in texture, taste, style and ingredients. A lot of it's very oily, there is a lot of stir fried stuff (involving ingredients and spices you've probably never heard of). But then there's soups, stews, dumplings, noodles, breads... so much. I studied in China and I miss its food.

I'm not American but I can imagine what Americanised chinese food is like, and I'm sure it's fine, but not very authentic. Like Australian chinese food, mostly meat/veges (western veges) in a somewhat viscous sauce. I also think Australian chinese food is delicious, but again, it's not authentic.

Chinese diaspora are in just about every place on earth, and their food is one of their major cultural influences, and changes depending on where you are in the world. Take this pic, I took in a chinese restaurant last year when I was traveling in Bolivia. It was run by Bolivian Chinese people. In Bolivia/South America chinese food is called Chifa (in mandarin, to eat is chīfàn, I assume that's how it got its bastardised name). The meal is pretty much just beef and green capsicum, so the food has evolved into a local bastardisation. Also notice that it has rice AND noodles, you can get one or the other or "mixto". I didn't realise that's what mixto was when I ordered it, but they fucking LOVE carbs in south america.

I would love to see a comparison of "chinese" food all around the world. It's a very interesting topic on how culture/people change and evolve depending on their environment.

Try out pig ears in chile sauce. That's weird and unexpected, that's kind of why I like it. A decent restaurant can make things that I've never had before and I like it that way.
