i bet it's delicious
but i think you've barely got enough sauce to cover your potato and onion, let alone the rest of the dish
and the colour is too light
next time i suggest you make a very dark roux at the start (the darker the roux, the less it will thicken, so it will be mostly just flavour and colour if you do it for 20-30 mins), cook the onions in that, in much smaller pieces, then have some more stock as well and end up with more, darker, flavourful sauce.
