Its legit difficult to find decent maki sushi outside of tourist areas and the one time of year where its part of a festival or something. Nigiri is sushi, maki is just how it was promoted to the rest of the world. Also the nori helps cover up the generally lower quality fish you get outside of Japan

ive tried it a few times mostly in NYC and it may be because im korean and raised on soju which is awful but tasteless while sake seemed to have flavors. i did enjoy a bottle of sake a roommate brought back from his own trip to NYC which was like cherry blossom flavored. i havent given it much chance but have tried what were supposed to be decent bottles but havent found one i really enjoyed so far.

I detest dry wines like a curse.
Personally perhaps a riesling or a mixed chardonay.
I would go for a wine with a semi lower percentage of alcohol than usual and a tiny bit of bubble but a much easier drink because it isn't dry as fuck..
There are also light red wines that you technically could drink with sushi.

Problem is that a lot of people mistake what is sold at these markets as drinking sake when it is cooking sake. Multiple times have I seen people buy specific cheaper sake, which still seems expensive, but in fact is meant for cooking and is horrible to drink. Good sake can be quite expensive, more than people realize sometimes.

This might be helpful. White -> the light grapefruit/florar, medium and rich might fit. I would go more for medium and rich in the dry white section. The off-dry in the sweet section might also fit. Ask for their recommendations in the restaurant also, the terms might also help you find the wine you like.

Compared to what? Good sake can be found for $25 a bottle. That's like, entry level for good wine. The stuff goes bad in a year, and it's made from rice, an infinitely renewable resource. To make it better you just polish it more. There's no "early frost OMG" or "we got some hail storms and now the grapes are all fucked". The supply constraints that exist for good wine simply do not exist for good sake.

In my experience a lot of the English teachers in the past 8 or so years come in knowing some Japanese or its very easy to pick up since there are so many volunteer schools now manned by middle aged Japanese women that lived abroad.
