I feel like I cooked up a fairly professional meal for about half the cost of a catered dinner. Last time I made 3 desserts including homemade marshmallows (matzo s'mores), lemon sponge cake, and chocolate macaroons. I would use chicken feet, wings, or carcasses if you can get them. Wings are the easiest option. Roast on parchment-lined sheet trays @ 400 along with or separately from your veggies then add cold water and simmer (slight bubbling) for 2-8 hours or until bones sort of fall apart a bit.

I mean you have probably had bad versions since you have perhaps only experienced/heard about large-scale commercial Jewish food sales like shitty delis or something. You can easily transform Jewish recipes into gourmet, well done food, but a lot of time they are doing it to fit a pricepoint and sometimes a religious certification, and/or they are serving large families and the food can't be expensive so they skimp on ingredient quality.

A nice latke is crispy or lacey if you want it to be.
