Yo, I make like, simple-ass nachos with melted grated cheese like every night pretty much. Is there any simple stuff I can add or do to maybe make them more interesting?

I'm in the same boat, once a week I make a pound or two of taco meat with ground beef. Heat up your beef in a small bowl first if it's coming from the fridge. Then layer of chips, layer of beef, layer of shredded cheese. Repeat thrice. Microwave whole thing for 1:20-2:00. Hot sauce on top. This is basically what I eat every single day, can feed myself for like 15$ a week. Note I only eat this for dinner and I skip the other two meals because I'm trying to get down to 220. When I started doing this intermittent fasting I was like 375, am currently 285.

Jalapenos are a necessity, my guy. Black olives are a solid contender too. A little diced tomato/onion and black beans are also a decent choice. If you can make your own pico de gallo, a small scoop on top is divine.

honestly i do enjoy guacamole (not guacamolé) with some crema acidifica. maybe some green olives, tomato. fried onions and bell peppers some salami some pepperoni some prosciutto and maybe some honey ham with just a bit of vinegar on like maybe a warm pita bread and like a thick slice of caciocavallo... the meats/cheese toasted... forget the guac.

don't melt the cheese directly on the nachos, I remember doing that as a kid and as soon as the cheese cools it gets all gnarly

instead, make a sauce and then pour it on
2 tablespoons of melted butter in a pot
2 tablespoons of flour, stir it until it starts to turn a little brown
add a cup of milk and heat it
then add the cheese and mix it in until it's melted
then pour that on your nachos, or put it in a bowl and dip them
