Most underrated cut ever. Extremely cheap beef cut because most people don't know how to cook it, but becomes a top tier cut in terms of flavour, tenderness, and easy of cooking when cooked in an automatic pressure cooker.

Since it's so fucking affordable I've put a cut of beef shank in my instant pot almost every other day. Works perfectly with anything salty & savoury. Works well in stews. Works perfectly when pulled and used as filling for tacos, etc etc.

When I make osso buco I make sure to have some toasted bread handy for when the meat has been stewing a while. Then I scoop out the marrow and have a lovely afternoon snack.

Found two nice slices on sale recently actually. I should make osso buco again soon even though we are kind of moving out of stew season. If nothing else I'll at least have a few more pics to post in threads like this instead of having to reuse this one.
