You're going to have fun here. Lots of places make a good Belgian style tripel. On tap, visit Monkish for Feminist or Brouwerij West. Both are known for hazy IPA, but started out as Belgian style breweries.
In bottles, look for Russian River Damnation. You can find it at Whole Foods or good bottle shops like Redondo Beach's Select Beer Store or Craft Beer Kings in El Monte. You might like the OG Delerium Tremens, which is available locally in 4x16oz cans. Most craft beer shops will have La Fin du Monde, which is pretty good. There is also Mischief by The Bruery, which is commonly available. It's a hoppy Belgian style ale.

Nah, the BCBS liners are mainly doing it for the spectacle. They meet up and trade. It's silly. You can still find this year's lineup in smaller liquor stores. I was just visiting my sister in a large suburb and we went to the local shop. They still had all of the line up on their shelf. The hype for bourbon barrel beer is dying slowly. It's very common and there are many excellent options. I just had a Stranahan's whiskey barrel aged stout from Brickstone that was leagues more memorable than bourbon county. Chicagoland has loads of excellent breweries. Some, like Mikerphone, do the california method because they're too small to distribute to shops. Their beer is top quality, but the liquor stores fane plenty of top quality beer as well.

I'm not shitting on cali, but i'm not sucking their cock either. I love this Alminac cherry sour, but I love this weisse just as much. (They also have a version with lactose and vanilla that's crack cocaine).

Shit on chicago if you want, there's plenty that deserves that, but our beer scene is excellent. Just as good as cali from my experiences there.

Their early work was a little too west coast for my taste. But when Solid Gold came out in '18, I think they really came into their own, commercially and artistically. I'm testing out my cider (7.5% ABV before carbonation) that I started a month ago, and I've got a pretty good buzz going after just two glasses. However, I noticed that it looks like there's oil in the cider, as if someone put a single drop of cooking oil in my fermentation bucket.
Anyone know if this is normal, or has a chance to infect the brew? I used regular, store bought apple juice to make the cider, so maybe it's some kind of additive.
It tastes fine and is completely clear.

The only other thing I can think of that might have resulted in the oil is the new siphon I used. I cleaned it with boiling water, but it might not have been enough.

NEED HELP! I just started a 5 gallon batch yesterday (Weizenbier), and now my bubbler is full of murky water and foam, and bubbling fast. I guess the beer bubbled up into the bubbler.
What do? Just take the bubbler out, sanitize it, and put it back? Is there anything else I need to do? Is there something wrong with my batch if it's bubbling so much that it's going up into the top of my bubbler? Is there any risk of contamination now?

k, I'll get a blowoff tube for the next time I brew. For now I just rinsed and sanitized the bubbler and put it back. I also turned the thermostat down and put some icepacks on top, hopefully if I get it colder it will slow things down. It was at 70-71 degrees.

Should be ok, then. I once had that happen brewing in a carboy and it clogged the tube to where it blew out the stopper. It was a real mess. Amazing how much force can build up because it spattered onto my ceiling.
