Chili, soups, stews, anything.
Just remember after chopping them up clean your hands properly, and take a piss first because if you don't and still have a slight little bit on your hands your dick will remind you, also if you wear contact lenses and change them after chopping a bunch of hot peppers. Roast them brother, cut in half length wise,take out Seeds put cut side down on sheet pan brush on oil veg oil ok. It not eating it. Put in 425oven or under broiler in till the blacken and blister,put in bowl cover with saran wrap for 20 min when cool pull of skin, slice add evoo,chopped garlic splash balsamic and chiffonade basil, unbelievable use on anything or just get a really good roll and add some italian Sharp provolone cheese.

preserve them by fire roasting them (blacken the skin)
throw them into a paper bag and let them steam for a long while; they should be cool enough to handle to remove the skin and seeds
give them a vinegar bath (red wine, sherry...whatever)
put them into jars and fill them up to about 1/2" from the top with vinegar.
Top with olive oil.
Use a skewer or chopstick to make sure no air is in the jar before topping with the oil.
They will last a year under refrigeration.

peppers should be roasted, or grilled, whole, don't cut them in half.
just wash them, and then roast or grill with lid down until they blacken all over, but before the flesh dries out. Turn them a bit. No oil.
then let them just rest in a paper bag and the skin will steam off

peel and deseed, peeling should be easy, at no point now wash them, they're covered in flavour.
You're toeing a fine line between maximum blackness, there should be black marks on the flesh, without drying out the flesh.
