I have always been pretty skinny but recently I had a breakup, lost some weight and then got sick and lost even more. Now I wanna regain some weight. What are easy dishes to cook that contain lots of calories and are still reasonably healthy and tasty? I'm not a strict vegetarian but I'm trying to limit my meat intake so I would prefer if it were vegetarian.
I'm a decent cook, but I don't wanna spend ages and I also don't wanna just eat mountains of alternating pasta and rice dishes...

Peanut butter, eggs, adding lots of olive oil to dishes(or coconut). Lentils and other seeds and beans. You could also go to your local health supplement store and get that high calorie weight gain powder.

Don't try to gain weight rapidly. That causes stretch marks. Just eat clean and stay moving. It's very unlikely you're underweight entirely by accident. You're just surrounded by sick people. There's no easy way to gain weight. Fat people gain their weight by having psychotically extreme physical addictions, if you saw how much they were actually eating as someone not subject to that same addiction you'd probably get nauseous just looking at it.

Sugar's only unhealthy because of its association with high calorie content and weight gain. So it's kind of nonsensical to want something that'll let you get lots of calories and weight gain in but without it being something that'll let you get lots of calories and weight gain in. All of those liquid weight gaining shakes rely on large amounts of sugar.

Sugar and alcohol really are bad for your pancreas and liver. Barring sugar, fat's the easiest way to pad your caloric intake without adding volume. Choose your fat and add an extra couple spoonfuls of it to whatever you're eating. That would end up being 200-300 extra kcals/day. An obvious choice would be olive oil. A more expensive, but beneficial choice would be flax seed oil. Over several months that would skew your omega 3 to omega 6 balance for the better. Natural peanut butter is one of the best foods for gaining weight. Nuts and seeds are also useful.

I am specifically asking for stuff that is not unhealthy... I'm also not looking to get fat, I just want to hit around 65-70kg, which is still skinny for my size.
I play volleyball, but I hate lifting, it's the most boring shit imaginable.

Pasta is very calorie dense and high in carbs. Eat chicken alfredo, pesto pasta, carbonara, mac n cheese etc, and wa la - you’ll be a regular obese amerilard in no time.

Whole milk. Don't just drink a bunch of it, work it into your daily routine. Use in coffee, take a swig in the morning, with afternoon snack, etc. like other anon said don't eat too much too fast and KEEP MOVING. An active body will accept more calories. Beer is good too.

Lots of soda. Not only is it very calorific it'll cause huge swings in your blood sugar meaning you'll feel hungry more often and get more cravings, causing you to eat more without really trying.
