What are some underrated sandwich fillings/spreads?
I just tried crushed hard boiled eggs, mixed with mayo. A lot better than I expected.

Egg, mayo and cress is one of the most common sandwich fillers you will find in the UK, certainly not underrated by any means. Can even buy it ready made pretty much anywhere in spread or prepackaged sandwich form.

Hummus mixed with curry powder is a good spread. Apple, onion and cheddar is a good combination to go with it.

Ham and peanuts is another good filling. I use roasted salted peanuts and scatter them over a slice of buttered bread. Layover some slices of ham and the second slice of bread.

I love a vietnamese bahn mi. It's the liver pate that adds that funkiness of liver and the fish sauce that adds that funkiness with the light and fresh herbal and citrus flavors. It's tangy from the pickled onion, and aromatic from cilantro and lemongrass...all inside a lightly toasted crusty french roll. It's perfection. I think people could say it's overrated, if they are fool enough to omit the liver pate. It's crucial to have that richness contrasting the freshness.
