Please rate the pizza I made tonight. I like to make Detroit style pizzas from scratch.

It's got muenster cheese, pepperoni, mushrooms, onions, and green peppers. I used a basic pizza dough recipe. No mixer, mixed by hand.

those three strips you see is the sauce. I use a raw sauce, so I put it on top to reduce a little bit. That's how it's done most of the time in Detroit. Half of the pepperoni is on the bottom to give a nice fatty quality to the crust. The rest of the peps are on top and among the cheese.

This is one of the most forgotten and overlooked aspects of what sets Detroit pizza apart. A lot of places here in Michigan don’t even know it.

Raw sauce means it isn’t cooked before it’s applied to the pizza. This will allow some of the water content to evaporate away as the pizza cooks and when finished it will have a unique texture to it. It is more like a paste than a liquid sauce at that point. The other important part of making a Detroit pizza is to use cubed cheese instead of grated cheese. This allows the crust to get nice and crispy before the cheese fully melts.

People really don’t appreciate how different and special Detroit style pizza really is.

Jar sauce you get from the grocery store is cooked before it gets bottled. What you’re doing is making your own sauce which is “raw” until you put it on the stove and start cooking it to reduce. Just use your sauce before you ever heat it.

Jet's Pizza makes a decent deep 'za and they're a fairly large franchise with plenty of locations. And believe it or not, Little Caesar's has a fairly solid deep boi as well.
