I find most hot sauces to be incredibly bitter and overwhelming, due to lack of fermentation time and half the product being seeds and pulp. It’s crazy how terrible the majority of sauces are, even craft small batch ones

I think that's because of the fairly rapid increase in popularity of hot sauces and people wanting more variety. Happened with craft beer too, there's a ton of craft beer that's worse than average macrobrews.

This is probably the best hot sauce I've ever tasted though. Has a decent flavor since it's got mustard, onions, spices, and a papaya base instead of just being vinegar/water. Tastes good on everything.

Way too vinegary, Crystal is the way to go if you like the flavor of Tabasco. Much more fruit forward sort of heat without that butt puckering bite from an excess of vinegar, but still very similar
