I can tell you someone that large wouldn't even be able to FIT at a station on the line in most fine dining restaurants. Commercial kitchens are kind of like airplanes . . . . space is at a premium and its important that people be able to move behind/around each other as they work.

Also being on the line is REALLY physically demanding. You're on your feet for 7-8 hours and always moving FAST. This is why in the past so many sous chefs/etc were doing cocaine, heroin, etc etc. After Anthony Bordain published Kitchen Confidential things got a lot better . . . people were pissed they were paying hundreds of dollars a plate for food made by staffers that rivaled strippers in their substance abuse.

There's more to flavor than seasoning. Also with under-seasoned stuff you can do some ghetto workarounds(table side salt/pepper/vinegar) and it's mostly an issue at cheap restaurants because they cater to the lowest common denominator palette. On the other hand it's pretty much impossible to do anything about over-seasoned food that's already served.
That being said 99% of dietary and similar studies done on other species are sketchy at best when it comes to their relevance to humans. Dietology is a meme 'science' in general because you can't do proper experiments.
