It depends on what you want out of your plating. I like a naturalish approach that isn't overly meticulous when I plate. So to achieve that I had to learn when less is more, when to leave something alone and have the confidence to not fuss over it. But learning how to use a spoon and your hands properly goes a long way (maintaining height by not being too tough with what you're plating, how to quenelle, etc).

Plating starts with colorful dishes and complementing colors. You have to be sure of your ingredients characteristics with regards to one another, first. Stick to the basics, and always ask questions like "does this garnish add appeal AND flavor?" "Does the serving/plating make sense with regards to how the food ends up finished or the order it intends to be eaten?" Maybe carrot flowers look pretty, but are they going to fall off the thing they're garnishing? Maybe you should julienne them.

Plating can be deliberately artistic, or strictly utilitarian. Use little "cheap" tricks like making duchess potatoes with a pastry bag instead of straight-up mashed. Fuck being flashy unless you're getting paid by someone to do it.
