The time I visited Shanghai I asked the hotel Concierge where the best Szechuan restaurant was. He gave me a name and it was in a shopping complex where the cheapest pair of socks was $1000. Japanese cuisine is popular because they treat ingredients with respect, use high quality and go for simplicity.

But that's my experience in China also. In Guangzhou, my friends family would buy a live chicken (or a silkie bantam) at the market, and come back 30 mins later to pick them up butchered and cleaned. Then they would just poach it with ginger.
It was better than any chicken i've ever had.

We'd also go to restaurants and order live fish which they kill to order, and steam whole.

They were also pretty big on really really fresh green leafy vegetables, either steamed or sauted with garlic.

So the perception I had of chinese food, which was big flavours and cheap ingredients (which I like), was not solely my experience in Guangzhou.
They almost seemed to have a Japanese/Italian preference for high quality ingredients and simplicity. It was a very delicate civilized cuisine that they favored, like Japan.

So i'm going to say China is the super cuisine. Because they can do what makes Japanese food great, which I hadn't really realised, but they can also do the hard hitting big flavours, the pools of oil, the spice.

categorically Chinese food encompasses and much larger variety of things and Japanese food borrow a lot fron it. But Japanese food has a sort of different focus. They're more about ingredient quality and simplicity presenting a variety of simple dishes in a single meal rather than one or two really complex ones. The japs also got nearly all their protein from the sea and rivers for 500 years and its affected nearly every facet of their tastes.
