I worked at an Outback in the Chicago area mid-90s. They made every damned thing from scratch. Every sauce, dressing, batter, you name it, and much of it had to be done by a kitchen manager. I know it's just mid-level resto food, really, but they took it very, very seriously.

Now it's a Sysco dumping ground. I know central kitchens are safer, and of course provide more consistency, but I miss the old days. Paper tickets, the flow of which was controlled by a manager putting them in a bowl for the grill guy. Big salads with dressings made in house. Vats of homemade caramel for desserts. Was a fun place to work. You could serve a decent product for the price.
