I love the green el yuteco hot sauce. And other than that, traditional flavored tabasco is good, but i kind of grew up with it. i haven't really experimented too much. the only reason i've even tried the el yuteco green sauce is because some mexican soup recipe i was trying out called for it.

The best is the one I make. But that's really more for taquizas and general food. (Burn the fuck out of tomatoes on a dry cast iron, or on the grill, make em black, about 3 or 4. 4 or 5 Serranos and 1 jalapeno -or- 5 or 6 chile de arbol, and 2 nice sized guajillos , 2 roasted garlic, half a large onion, chicken boullion, salt and pepper )

But store bought we tend to use Valentina to snack , yucateco red is my preferred store bought sauce

I do an overpriced hot sauce of the month club, so most of my sauces are new to me, or in varied rotation. That said, Yucateco red, green, XXX, and Caribbean get heavy play, as does pic related.

It's like sambal oelek in texture, almost a relish as much as a sauce. Fruity from the scotch bonnets, which are the first ingredient, but they're aged and pickled which mellows the heat out a bit. It's still pretty darn hot, while having a lot of pepper flavor.

>> No.11845382

All their sauces have this artificial lime taste in them that just grosses me out to the point that I can't taste anything else. It's too bad bc they're clearly solid sauces, but that taste has ruined many a sauce for me - anything from Lucky Dog, for instance.

Made my first fermented hot sauce last weekend. I've become obsessed with it and it's half gone already, which means that it tastes awesome but it's not hot enough. For the next batch I probably need to add something like xanthan gum to keep the liquids and solids from separating. >> No.11861215

Yes I know. I am a Mexican expat living in Europe at the moment. From the northeast of Mexico in fact. Piquin is very known sought after over there, and something I grew up with.

I have about a kilo bag of it waiting for me on my mom's freezer in Mexico. Unfortunately, it's hard to grow peppers here. I am actually thinking of making one of those bucket thingies that the junkies use to plant weed to grow chillies around here. Either that, or just put them by the window and supplement with glow lights.

We usually don't eat them whole, although more badass people such as my grandma, may she rest in peace, did add a handful of them to her soup.

Formula 47.
I picked it up at this little craft show in Buffalo. It is probably the most amazing hot sauce I've ever had. It's not hot, but it's like... tangy and zesty?

It's almost like a spicy marinara.

What's the best Louisiana-style hot sauce? Typically only have 3 ingredients:
Fermented cayenne mash
white vinegar

Tabasco is too watery for me, is Crystal or "Red Dot" more true to the Louisiana style? Or red rooster?

>> No.11873478

I like Crystal personally.

>> No.11873519

red dot is poor people hot sauce. it's typically less than half the price of Tabasco and they only age their peppers for 1 year, vs tobasco's 3. it doesn't mean it's bad, but keep it in mind when you taste it. it doesn't have the greatest flavor but if you seriously need to save $2 or $3 then go for it.

>> No.11873525

Every seafood restaurant in California has Crystal. hmm I bet it tastes great with chowder or fried shrimp. ty for the suggestion

>> No.11873596

people always talk about how long tabascos peppers are aged for but imo it doesn't matter if all you can taste is the vinegar. I'll gladly take red dot over tabasco.

I'm from Louisiana. Crystal is like watered-down Louisiana hot sauce. Skip Crystal, unless Louisiana hot sauce is too hot for you. Never heard of "Red Dot" before.

That's because it has no real taste, it's pure extract heat. The 2 beyond it have higher scovilles but they at least have some taste

>> No.11875989

Is that why it's like that. I've had "The last DAB" before and it's hot but doesn't seem that insane. I've bitten into raw chilies that fucked me up more. I'm not wild about the flavor but it has one. Da Bomb just appears to taste like battery acid and I didn't know why that was but I'm certain they only keep it because it sucks to eat. A dubious honor for whoever makes it.

Recently got Da Bomb Beyond Insanity, and Power Drops 3mln, but Nothing Beyond has a nice flavor...

Gotta say Da Bomb *stinks*.

>> No.11877339

Other than being hot as fuck and slow to attack, Da Bomb has little to speak of - rather repulsive scent and unpleasant flavour.

I guess they keep it on Hot Ones because it can really fuck you up - it takes good five seconds before the heat really takes, so you may take a good few bites, while others would stop you after the first nibble.

You have the pallet of a child you faggot. It's full of sugar.

There are habanero sauces with the same consistency, generally the same ingredients (habanero, onion, garlic, carrots, ect) that don't put fucking sugar in their sauce

aardvark does suck but not because of the sugar, and ingredient lists are in order of use, there's so little used that it doesn't need to be put on the actual breakdown sheet

thinking a bit of sugar or honey doesn't go with a sauce with tomatoes and carrots shows you have zero understanding of how ingredients work together, it even rounds out the vinegar to be smoother and overpower the other ingredients less
